Ingredients:
For the filling:
- 2 large potatoes (boiled and mashed)
- 1 cup mixed vegetables (peas, carrots, green beans, etc.)
- 1 small onion (finely chopped)
- 2-3 green chilies (finely chopped, optional)
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon chili powder (optional)
- Salt to taste
- Fresh cilantro (chopped)
- Lemon juice (optional)
For the dough:
- 2 cups all-purpose flour
- 4 tablespoons oil or ghee
- 1/2 teaspoon salt
- Water (as needed to form a dough)
To fry:
- Oil for deep frying
Instructions:
Step 1: Prepare the filling
- Heat 1 tablespoon of oil in a pan over medium heat.
- Add cumin seeds and mustard seeds. Let them splutter for a few seconds.
- Add chopped onions and sauté until they become golden brown.
- Add green chilies (if using), then add the mixed vegetables and cook until tender.
- Add mashed potatoes, ground coriander, turmeric powder, garam masala, ground cumin, and chili powder (if using). Mix well.
- Cook the mixture for a few minutes, stirring occasionally, to blend all the spices together.
- Add salt to taste and finish with fresh cilantro. You can also add a little lemon juice for extra flavor.
- Set the filling aside to cool.
Step 2: Prepare the dough
- In a large bowl, mix the flour and salt.
- Add 4 tablespoons of oil or ghee and rub it into the flour until the mixture resembles breadcrumbs.
- Gradually add water and knead the dough until it becomes smooth and firm.
- Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
Step 3: Shape the samosas
- Divide the dough into small equal-sized balls.
- Roll each ball into a thin oval or round shape (about 4-5 inches in diameter).
- Cut the circle in half to make two semi-circles.
- Form a cone shape by folding each semi-circle into a cone, sealing the edge with a little water.
- Fill the cone with the prepared filling, leaving some space at the top.
- Seal the open edge of the cone by pinching it together and folding it to form the triangular shape of a samosa.
Step 4: Fry the samosas
- Heat oil in a deep frying pan or wok over medium heat.
- Fry the samosas in batches, turning occasionally, until they are golden brown and crispy (about 4-6 minutes per batch).
- Remove the samosas from the oil and drain on paper towels.
Step 5: Serve
- Serve hot with tamarind chutney or mint chutney for dipping.
Enjoy your homemade samosas!
